Guilt-Free Christmas

practolNow that Christmas is here, you really need to have a good strategy so that you don’t end up eating too much.  Being social is one thing, but being a glutton is another all together!  Let’s face it, we all have Christmas parties to attend.  Work parties, parties with friends, family parties, and so on – the events are a blast and the food is good but how do you navigate the tabels without overeating?  Follow these easy tips and come away from the party feeling like a million bucks!

  1. Have a light snack before you go.  This is probably one of the smartest things you can do to protect yourself from over eating.  Before going to a party, have a light snack that won’t fill you up but will give you enough fuel so that you don’t feel famished by the time dinner is served.  I recommend something like a granola bar, or a bowl of soup, or a piece of toast with jam or something like that.  These things will give you energy and help curb your appetite too!
  2. Don’t overload your plate.  This may seem obvious but I’ve been to parties and seen people put so much food on their plate that it looked like a small mountain of food.  I think they did this either because they wanted to try a little bit of everything or they didn’t follow my step #1 of having a light snack before heading to the party.  I know that all the food looks good, but start off with a small serving on your plate and go for a similarly sized second helping later.  Not only does everyone get a chance to eat some of the yummy foods, but it also helps you eat LESS because by the time you go back for seconds, you’ll have some food in your stomach telling you that you don’t need a huge second helping.
  3. Easy Tasty Grilled Chicken

Famous Dave's Chicken Rub

Some people are afraid to cook.  Other people are born naturals.  The rest of us are somewhere in between.  We love good food, aren’t too afraid to make it, but just can’t seem to get things just right.  Chicken can be one of those foods that people seem to shy from.  If you under cook it, it’s gross.  If you over cook it, it is dry and unappetizing.  How do good cooks make great tasting chicken?!

I stumbled on to this method this year and have used it almost on a weekly basis.  I always have a lot of chicken at home and use it in a number of different ways.  This recipe is tasty, has some zing, but is also versatile enough that you can use the chicken in a number of different applications such as a chicken sandwich, chicken salad, chicken with vegetables, and just about anything else.

The secret to my recipe is Famous Dave’s Chicken Rub.  I found this rub while buying some hardware at a local hardware store (of all places) and decided to give it a try.  The first time I had this I was hooked and now have a handy supply of Famous Dave’s rub on hand.

So, the recipe:

Boneless, Skinless chicken breasts (rinsed and de-fatted – I use scissors to cut off the fat)
Famous Dave’s chicken rub
That’s it.

Put the chicken in a bowl and add as much rub as you want.  It’s hard to give an estimate of amount but I would say 1 tablespoon per 2 chicken breasts.  Mix the chicken and the rub until you have a nice distribution of chicken-to-rub.

Turn on your grill on medium-high and spray the grill to make sure the chicken doesn’t stick.  Once the grill is ready, put the chicken on for 5 minutes.  Flip the chicken and let it cook for another 3-5 minutes and they’re ready to eat!  These times are estimates – I have a small grill and it has low BTU’s.  If you have a big powerful grill, your times will be less.

Enjoy this low fat, delicious recipe on a sandwich or on a sald.  Even more tasty with a cold lite beer.
